Muringyaella Mutta Thoran / Drumstick Leaves Stir Fried with Egg

Hope you are doing well. Today I am posting a recipe with one of my favourite ingredient i.e, Muringyaella / drumstick leaves which has tremendous health benefits. They are a good source of protein, potassium, calcium and vitamin C. It is also rich in antioxidants, anti-inflammatory properties, controls blood glucose & cholesterol levels, relieves menstrual pain and cures constipation problems. With all this nourishing & nutritional  health benefits here is the recipe for Muringyaella Mutta Thoran / Drumstick Leaves Stir Fried with Egg😋.

COOK TIME :   15 mins
SERVINGS    :  3 - 4  servings
INGREDIENTS:
Muringyaella / Drumstick Leaves  -  4 cups
Medium - sized Onion  -  1
Egg   -  2 nos
Dried Red Chillies  -  2 nos
Raw Rice  -  1/2 tsp
Urad Dal  -  1/2 tsp
Mustard Seeds   -  1/2 tsp
Turmeric Powder   -   1/2 tsp
Red Chilly Powder   -  1 tsp
Pepper Powder  -  1/2 tsp
Hing / Asafoetida   - 1/ 2 tsp
Salt   - to taste
Oil  -   2 tbsp 

For Grinding:
Grated Coconut   - 1/2 cup
Green Chilly   -  1
Curry Leaves  -  2 sprigs
Small Pearl Onions   -  3 nos
Garlic pods  -  3 nos
Cumin Seeds (Jeera)   -  1 tsp
STEP 1:
Firstly separate drumstick leaves from it's stem, wash it thoroughly under running water and keep in water for sometime. Also, finely chop the onion and keep it aside.
STEP 2:
In a medium bottom non-stick pan, add 2 tbsp of oil, once hot splutter mustard seeds, followed by raw rice, urad dal, dried red chillies, asafoetida (hing)  and mix till it turns brown in colour. Then, add finely chopped onions and saute it till the onion becomes translucent.
STEP 3:
Once the onion becomes soft and light brown in colour add the washed muringyaella / drumstick leaves along with turmeric powder, red chilly powder, salt to taste and cook it for few minutes on low flame till the leaves are cooked.
STEP 4:
Meanwhile, in a small bowl, beat the eggs along with salt, pepper powder and pour the beaten egg into the cooked drumstick leaves & mix well till the eggs are scrambled properly.
STEP 5:
While the drumstick leaves are getting cooked, in a mixer add grated coconut, green chilly, curry leaves, cumin seeds (jeera), small pearl onions, garlic pods and grind the mixture into fine paste without adding water. Once the coconut mixture is prepared add it with cooked drumstick leaves and egg, mix it well and cook it for 2 - 3 minutes on low flame. Once done, plate it in a bowl and have it with rice and curry as a side dish.

[NOTE:- This recipe can also be prepared without egg, just skip the step 4 from the above steps while the other steps remain the same.]
