Vegetable Steamed Egg Muffin - A Healthy Morning Meal

Hope all are feeling well and are in a safe place😃. A cup of tea in morning makes everything better. In the same way, a healthy morning meal fuels you up, sets up your metabolism, builds better health and helps to meet daily dietary requirements. Though after a long time, I have started agreeing to this saying, 'You don't have to eat less, You just have to eat right.' Eating right food at regular intervals reduces your hunger pangs and stops from hogging food unnecessarily.
Eggs are one of the least expensive, containing balanced proteins and is also a good source of omega-3 fatty acids which form a healthy morning meal. Below is a healthful post with a recipe of Vegetable Steamed Egg Muffin - A Healthy Morning Meal😋.

SERVINGS : 1 - 2 servings
INGREDIENTS:
Eggs - 3 nos
Small sized onion - 1
Capsicum - 1/2
Carrot - 1/2
Green Chilly - 1
Turmeric Powder - 1/2 tsp
Red Chilly Powder - 1/2 tsp
Pepper Powder - 1/2 tsp
Salt - to taste
Oil - 1 tbsp
Water - 1 cup for steaming
STEP 1:
Finely grate the carrot and chop onion, tomato, capsicum, green chilly.
STEP 2:
In a medium bottom non-stick pan, add 1 tbsp of oil, once hot add the finely chopped vegetables and grated carrot from step 1 and stir fry it for 2 - 3 minutes.

Next add turmeric powder, red chilly powder, freshly grounded pepper powder and salt to taste into the stir fried vegetables and mix well till spices become aromatic. Once the vegetables are done, keep it aside and let it cool.

Take an idly steamer, add water into the steamer and place it over the stove on a high flame and let it boil. Meanwhile, grease the idly stand / plate with 1-2 drops of oil. Next place the stir fried vegetables first at the bottom in each section of the idly stand / plate and dab / press it with the backside of a spoon so that it get set properly in each section.
And lastly, break an egg over each of the well placed stir fried vegetables section. (Please note that this is an important stage in this whole recipe, make sure the egg is broken slowly by dropping the egg white first and finally the yolk in the exact centre of the idly stand or plate.)

And the last step, once the water inside the idly steamer gets boiled, place the egg filled idly stand / plate into the steamer, close the steamer with a lid and keep it on medium flame for 15 mins till the eggs are steamed and cooked to perfection. After the eggs are done, pick up the idly stand / plate, tilt it a little bit to remove the excess water generated while steaming the eggs and keep it aside and let it cool for few minutes. Once cooled, scrape out the vegetable steamed egg muffin from the stand/ plate and plate it by sprinkling little pepper powder & salt over the muffins and also with some left over stir fried vegetables.
