A Savoury & Lip-Smacking Bharwa Karela / Stuffed Bitter gourd with Peanut Powder

Hope you are doing well and everything turns out great for all. Well, today I am posting a recipe of one of my most disliked vegetable i.e, bitter gourd😅. I relish most of the veggies except bitter gourd.....but why?? I have always thought about why bitter gourd gives me such a disgust feeling, though it an excellent source of dietary fibre and include nutrients such as iron, magnesium, vitamin to potassium and vitamin C and also it has varied health benefits such as maintaining blood sugar levels, cleansing liver, boosts immune system and its also great for eyes, hair and for glowing skin. Well, after so much of self-analysis, I came to know that it's the bitter taste that's not very appealing to me. 

But on the contrary, I am in love with this recipe made with bitter gourd, also, it doesn't even taste bitter /acidic and it completely changed my taste bud. Today, I  make sure this recipe is made in my kitchen frequently. So here I am posting a savoury & lip-smacking Bharwa Karela / Stuffed Bitter gourd with Peanut Powder for all the bitter gourd & non- bitter gourd lovers.

SERVINGS    :  3 Pieces

INGREDIENTS:
medium or small sized bitter gourd
Salt to rub

For the masala stuffing:-
Medium sized onions   - 2 nos
Coriander leaves     - 3 tbsp
Lemon        - 1/2
Turmeric Powder   -   1/2 tsp
Coriander powder   - 1 tsp
Cumin powder        - 1 tsp          
Red chilli powder    - 1 tsp
Garam Masala         -   1/2 tsp
Hing / Asafoetida     - 1/ 2 tsp
Roasted Peanuts (crushed)    - 3 tbsp
Besan (gram flour)    - 1 tbsp
Ghee            - 1 tbsp
Oil for deep frying
Salt to taste
Medium length Strings / thread (to tie the bitter gourd)    - 3 nos



STEP 1:
Firstly, for the opening slit the bitter gourd vertically, do not cut it into half, make sure the bitter gourd doesn't break into two parts. Scrape the inner and outer side of the bitter gourd with a knife or a spoon. 
Next, rub salt on the inside and outside of the bitter gourd & leave it aside for 20 minutes.
Meantime, finely chop the onions, coriander leaves and keep it aside.
Later, after 20 minutes wash the salt rubbed bitter gourd well under the tap water and squeeze out the excess water and pat them gently and dry it.


STEP 2:
Secondly for the masala stuffing, take a medium-bottom kadai, add 1 tbsp of ghee. Once hot, add hing / asafoetida, onions, little salt and saute till the onions turn golden brown in colour.
Once the onions are sauteed, add besan, all the spice powders and keep stirring till the spices become aromatic. 
STEP 3:
After the onions are mixed well with spices, add the peanut powder, coriander leaves and squeeze the lemon, mix well and let the mixture for the masala stuffing cool for sometime.

STEP 4:
Next, carefully stuff the cooled masala inside each bitter gourd and tie them with a medium length string/thread, so that it does not fall apart.
STEP 5:
Lastly, take medium bottom kadai, add enough oil for deep frying the bitter gourd, once oil becomes hot, carefully place the tied & stuffed bitter gourd in the hot oil and cook each side of it till it become golden brown in colour on a medium/low flame. Once done, remove the fried golden-brown coloured bitter gourd from the oil and place it on the tissue so that it absorbs the excess oil. Plate the Bharwa Karela / Stuffed Bitter gourd with Peanut Powder with roti or phulkas or as a side dish with rice.
