A delicious 2 - Step Maharashtrian Style Koshimbir / Veggie Curd Salad

Hope all are doing well. 'Curd' is rich in calcium, vitamin B-2, vitamin B-12, potassium and magnesium. It also has amazing health and beauty benefits. I, myself include curd twice a day (afternoon & evening) as a routine in my diet. Curd has some incredible benefits such as providing healthy digestive system, radiant skin, strengthened bones & teeth, improvised immunity, weight reduction and removal of dandruff and dark spots.
Maharashtrian cuisine includes both spicy and non - spicy dishes which has distinctive flavours as compared to other Indian cuisines. Being bought up in 'AAMCHI MUMBAI' I love their cuisine and miss being a 'MUMBAIKAR'😃. So today's recipe is a delicious 2 - Step Maharashtrian Style Koshimbir / Veggie Curd Salad, which has a unique taste and also have an array of benefits due to inclusion of curd and vegetables in it.

SERVINGS : 4 - 5 servings
INGREDIENTS:
Large sized Cucumber - 1
Medium sized Carrot - 1
Small sized onion - 1
Small sized Tomato - 1
Medium sized Pomegranate - 1
Green Chillies - 2 nos
Coriander leaves - 3 tbsp
Mild Sour curd - 1 1/2 cup
Roaster Peanut Powder - 2 tbsp
Sugar - 2 tsp
Salt - 1/2 tsp or to taste
STEP 1:
Finely grate cucumber, carrot & chop onion, tomato, green chillies, coriander leaves, remove the pomegranate seeds and keep it aside.

Next, in a mixing bowl, add all the grated & chopped vegetables along with pomegranate seeds, curd, roasted peanut powder, sugar, salt to taste and mix well. After mixing, plate it with some pomegranate seeds and some roasted peanut powder on top of the appetizing salad.
